Bu çalışma, farklı illerde (Giresun, Rize, Samsun Yalova ve Ordu) yetiştirilen kivinin kalite özelliklerinin muhafaza süresince değişimini belirlemek amacı ile 2017- 2018 yıllarında yürütülmüştür. Meyveler, 5 ay süresince 0±0.5°C ve %90±5 oransal nem koşullarında ve depolama sonrasında 5 gün oda koşullarında (22°C ve %70 oransal nem) bekletildikten sonra ölçüm ve analize tabi tutulmuştur. Meyvelerde ölçüm ve analizler 30 günlük aralıklarda yürütülmüştür. Tüm meyveler modifiye atmosfer ambalajlarda (Xtend, Stepac) muhafaza edilmiştir. Muhafaza süresince, Yalova’da yetiştirilen meyvelerden önemli seviyede daha düşük ağırlık kaybı ve solunum hızı ölçülmüştür. Halbuki en yüksek ağırlık kaybı ve solunum hızı Rize ve Samsun illerinde yetişen kivilerde belirlenmiştir. Hem depolama hem de raf ömrünün son ölçüm döneminde, Giresun ve Ordu ilinde yetişen meyvelerin sertliğinin, Samsun ve Yalova illerinde yetişenlere kıyasla önemli derecede daha yüksek olduğu saptanmıştır. Genel olarak SÇKM içeriği bakımından Samsun; titre edilebilir asitlik içeriği bakımından Giresun; C vitamini, toplam fenolik bileşikler ve antioksidan aktivitesi (DPPH testine göre) içeriği bakımından ise Yalova ilinde yetişen meyvelerin diğer illere kıyasla daha yüksek içeriğe sahip olduğu görülmüştür. Fakat toplam flavonoid içeriği bakımından ise Ordu ve Rize illerinde yetişen meyvelerin, diğer illere kıyasla önemli derecede daha yüksek içeriğe sahip olduğu tespit edilmiştir. Sonuç olarak yetiştiricilik bölgeleri arasında meyve kalite özellikleri bakımından farklılıkların olduğu görülmüştür. Yalova ilinde yetiştirilen Hayward çeşidi kivide depolama süresince kalite kayıplarının daha az olduğu görülmektedir.
This study was carried out to determine the change of quality characteristics of kiwifruit grown in different provinces (Giresun, Rize, Samsun Yalova and Ordu) during storage. The fruit were stored for 5 months at 0.0 ± 0.5 ° C and 90 ± 5%relative humidity, and for shelf life, fruit were kept at 22°C and 70%relative humidity. Monthly storage and shelf life quality of fruit were investigated. In cold storage, modified atmosphere packagings (Xtend, Stepacl) was used. Weight loss was detected in all provinces but at least in Yalova province. Weight loss was found at least in Yalova. Respiration rate was higher in the fruit of Rize and Samsun, although the lowest in both storage and shelf measurements were measured in Yalova fruit. Color change occurred in all provinces. The softening of fruit flesh firmness was mostly detected in fruits grown in Yalova. The highest SSC value was found in the fruit of Samsun and Yalova provinces. Vitamin C was found to be higher in Yalova fruit during storage and Samsun and Yalova fruits during shelf life. Vitamin C was found to be high in the fruit of Yalova during storage and in fruit of Samsun and Yalova during shelf life. The least increase in pH was observed in fruit in Yalova. Titratable acidity value decreased, the lowest values were found in fruit of Rize province. During storage, acidity value was found to be highest in Yalova province and highest value was found in Giresun fruits in shelf life measurement. Antioxidant activity results of total phenolic compounds and DPPH tests were higher than Yalova fruit. Total flavonoids content was high in Ordu and Rize fruit. According to the FRAP test, antioxidant activity results were higher in Giresun and Yalova fruit. As a result, it is seen that there are differences in fruit quality characteristics among the growing provinces. Hayward variety grown in the provinces of Yalova, fruit has less losses during storage.
