Abstract: Araştırma, farklı olgunluk safhasında hasat edilen hünnap meyvelerinin (Ziziphus jujuba Mill. cv. Lang) soğukta muhafaza süresince meyve kalite özellikleri üzerine modifiye atmosfer paketleme (MAP) uygulamalarının etkilerini belirlemek amacı ile yürütülmüştür. Meyveler, 0±0.5 °C ve %90±5 oransal nem koşullarında, 42 gün boyunca muhafaza edilmiştir. Meyvelerde, haftalık olarak kalite özellikleri incelenmiştir. MAP uygulaması, ağırlık kaybını önemli derecede geciktirmiştir. MAP ile muamele olmayan uygulamalarda, olgunluk safhasının ağırlık kaybı üzerine etkisi de önemli bulunmuştur. Soğukta muhafaza süresince MAP uygulanmış meyvelerde daha yüksek solunum oranı ölçülmüştür. MAP uygulanmış meyvelerin L* ve hue açısı değeri, MAP ile muamele olmayan meyvelerinkinden önemli derecede daha düşük, kroma değeri ise daha yüksek ölçülmüştür. Meyve eti sertliğinde meydana gelen yumuşama, MAP uygulamaları ile önemli derecede geciktirilmiştir. MAP uygulanmış O-3 olgunluk safhasındaki meyvelerden en yüksek SÇKM elde edilmiştir. C vitamini, toplam fenol, antioksidan aktivitesi ve toplam flavonoid, MAP uygulamaları ile önemli derecede muhafaza edilmiş olup, genel olarak O-2 ve O-3 olgunluk safhalarında daha yüksek değerler ölçülmüştür. Hünnap meyvelerinde kateşin ve epikateşin içeriği diğer fenolik asitlere göre daha yüksek seviyede bulunmuştur. Genel olarak MAP uygulanmış meyvelerden daha yüksek değerler elde edilmiştir. Aynı zamanda olgunluğun ilerlemesi ile fenolik asit içeriği artış göstermiştir. Sonuç olarak bu çalışma hünnap meyvelerinin kalitesini daha uzun süre sürdürmek için O-2 ve O-3 olgunluk safhasında hasat edilen meyvelerin MAP ile muamele edilerek depolanması gerektiğini açığa çıkarmıştır.,
The study was carried out to determine the effects of modified-atmosphere packaging (MAP) treatments on fruit quality characteristics during cold storage of jujube fruits (Ziziphus jujuba Mill. cv. Lang) harvested at different maturity stages. The fruits were stored at 0±0.5 °C and 90±5% RH during 42 days. Quality characteristics were weekly measured. Weight loss was significantly delayed with MAP treatments. In addition, effects of maturity stage on weight loss were significant found in without MAP treatments. Higher respiration ratio in MAPtreated fruits was measured during storage period. L* and hue angle values of MAP-treated fruits were significantly lower than non-MAP treated fruits, whereas higher chroma values were measured. Softening occured in fruit firmness was significantly retarded with MAP treatments. SSC of MAP-treated fruits in O-3 maturity stage was higher than other fruits. Vitamin C, total phenol, antioxidant activity and total flavonoids were significantly maintained in MAP treatmens. In genaral, higher values were measured at O-2 and O-3 maturity stages for bioactive compounds. Catechin and epicatechin contents of jujube fruits were higher found than other phenolic acids. In genaral higher values in MAP-treated fruits were obtained. Also, the phenolic acid content increased with ripening progress. In conclusion, this study revealed that jujube fruits harvested at the maturity stage of O-2 and O-3 must be stored by treating with MAP to maintain the quality of fruits for a longer period.
