Abstract: Bu çalışma 2017 ve 2018 yıllarında Trabzon ilinin Tonya ve Sürmene ilçelerinde doğada kendiliğinden yetişen ve seleksiyon ıslahı yöntemiyle seçilmiş olan muşmula genotiplerinin fitokimyasal ve antioksidan özelliklerinin belirlenmesi amacıyla yapılmıştır. Çalışmada 8 genotip Sürmene ve 7 genotip Tonya ilçesinden olmak üzere toplam 15 genotip değerlendirilmiştir. Genotiplerde suda çözünür kuru madde miktarı % 7.9-13.8; titre edilebilir asit miktarı % 0.6-1.4; pH 8.7-9.1; C vitamini içeriği 21.5 mg/L-44.2 mg/L; toplam fenol içeriği 41.1 mg/100 g-410.8 mg/100 g; organik asit içeriği (sitrik asit, malik asit, süksinik asit) sırasıyla, 2 mg/100 g-32.0 mg/100 g, 590.5 mg/100 ile 1074.5 mg/100 g, 127.0 mg/100 mg419.0 mg/100 g; şeker içeriği (sükroz, glikoz, fruktoz) sırasıyla, 126.5 mg/100 g399.0 mg/100 g, 2108.0 mg/100 mg-3017.0 mg/100 g, 3254.5 mg/100 g-4726.0 mg/100 g; protein miktarı %1.6-% 2.7; toplam su miktarı % 68.20-% 75.82; yağ oranı % 0.14-% 9.39; toplam kül oranı % 2.2-% 6.8; toplam karbonhidrat oranı % 47.3-% 73.1 ve toplam antioksidan kapasitesi 13.1 mmol/100 g-77.8 mmol/100 g arasında bulunmuştur.,This study was carried out to determine the phytochemical and antioxidant properties of medlar genotypes which were grown in Tonya and Sürmene districts of Trabzon province in 2017 and 2018. Total of 15 genotypes were evaluated in the study, including 8 genotypes from Sürmene and 7 genotypes from Tonya.As a results, total soluble solid content was found 7.9%, 13.8%, the titratable acid content 0.6% to 1.4%, pH 8.7 to 9.1, vitamin C content 21.5 mg/L to 44.2 mg/L, total phenol content 41.1 mg/100g and 410.8 mg/100g, organic acid content (citric acid, malic acid, succinic acid) respectively, 2 mg/100g with 32.0 mg/100g, 590.5 mg/100g with 1074.5 mg/100g, 127.0 mg/100mg with 419.0 mg/100g, sugar content (sucrose, glucose, fructose) respectively; 399.0 mg/100g with 126.5 mg/100g, 3017.0 mg/100g with 2108.0 mg/100mg, 4726.0 mg/100g with 3254.5 mg/100g, protein content of 1.6% to 2.7%, moisture of 68.20% 75.82%, fatty content 0.14% to 9.39%, the ratio of ash was 2.2% to 6.8%, the total carbohydrate rate was 47.3% and 73.1%, and the antioxidant capacity ranged from 13.1 mmol/100g to 77.8 mmol/100g.
