Araştırmada birisi kontrol örneği olmak üzere beş çeşit beyaz peynir
üretilmiştir. Peynirlerin üretiminde kulllanılan süt miktarına göre %0.02 oranında
karadut, böğürtlen, kara üzüm ve ahududu meyve kuruları telemeye katılmıştır.
Kalıplanan peynirler vakum paketleme makinesi ile ambalajlanmış ve 7±1°C’de 90
gün boyunca olgunlaşmaya bırakılmıştır. Olgunlaşma süresince (5., 30., 60., 90. gün)
peynirlerden örnekler alınarak kuru madde, kül, yağ, pH, titrasyon asitliği, tuz, toplam
protein, olgunlaşma oranı, protein olmayan azot oranı (NPN), amino azot oranı,
elektroforetik kazein fraksiyonları, tekstürel özellikler ve duyusal analizler
gerçekleştirilmiştir.
Olgunlaşma süresince gerçekleştirlen analizlerden çıkan sonuçlar istatistiksel
olarak çeşit, dönem, çeşit ve dönem faktörlerinin peynirlere etkileri karşılaştırılmıştır.
Kimyasal analizlerde farklı meyve kurusu katılmış peynirlerin kuru madde, pH, tuz,
asitlik, SÇA, NPN ve olgunlaşma değerlerinde önemli farklılıklar bulunmuştur
(P<0.05). Farklı meyve kurusu katılmış peynirlerin olgunlaşma süreslerinde yağ ve
protein değerlerinde çeşit, dönem, çeşit ve dönem faktörlerinin etkisi önemli
görülmemiştir (P<0.05).
Panalistler tarafından gerçekleştirilen duyusal değerlendirmelerde, peynir
çeşidi olarak ahududu kurusu katılmış peynirler, böğürtlen, kara üzüm, karadut
katılmış peynirlere kıyasla daha çok beğeni kazanmıştır. Olgunlaşma sürelerine göre
değerlendirildiğinde olgunlamış peynirlerin, taze peynirlere kıyasla daha fazla
beğenildiği duyasal analizler sonucu görülmüştür.
In the study, five kinds of white cheese were produced, one of which was a
control sample. According to the amount of milk used in the production of cheese,
black mulberry, blackberry, black grape and raspberry dried fruit were added to the
curd at a rate of 0.02%. The molded cheeses were packed with a vacuum packaging
machine and left to mature for 90 days at 7±1°C. Dry matter, ash, fat, pH, titration
acidity, salt, total protein, ripening rate, non-protein nitrogen ratio (NPN), amino
nitrogen ratio by taking samples from cheeses during maturation (5th, 30th, 60th, 90th
days), electrophoretic casein fractions, textural properties and sensory analyzes were
performed.
The results of the analyzes carried out during the ripening period were
statistically compared to the effects of variety, period, variety and period factors on
cheese. In chemical analyzes, significant differences were found in dry matter, pH,
salt, acidity, SCA, NPN and ripening values of cheeses with different dried fruit added
(P<0.05). The effects of cultivar, period, variety and period factors on fat and protein
values were not found significant in ripening times of cheeses with different dried fruit
added (P<0.05).
In the sensory evaluations made by the panelists, cheeses with dried raspberry
were more appreciated than cheeses with blackberry, black grape and black mulberry.
When evaluated according to ripening times, it was seen as a result of sensory analyzes
that ripened cheeses were more appreciated than fresh cheeses.
